Things were a little funny around here today. The girls set up an indoor mini golf course, thanks to a show for giving them the idea. They had a good 20 minutes of fun, at least, it was like a par 100 LOL.
Haddie was winning.

While the girls were busy playing sports, golf a sport pfff LOL, the boys were in the kitchen making lunch.
I love a man that can cook...that goes for little men too :)
They were so proud to be helping. They kept letting everyone know that they helped make lunch and asked if it was the best ever.
We made some really good "Skinny" Swedish Meatballs. I am still loving Gina's recipes...actually have a whole week of new ones to try this week.
Ingredients:
1 tsp olive oil
1 small onion, minced
1 clove garlic, minced
1 celery stalk, minced
1/4 cup minced parsley
1 lb 93% lean beef
1 egg
1/4 cup breadcrumbs
salt and pepper to taste
1/2 tsp allspice
2 cups reduced sodium beef stock
2 oz light cream cheese
Directions:
In a large deep saute pan, heat oil on medium heat, add onions and garlic; sauté until onions are translucent, about 4-5 minutes.
Add celery and parsley and cook until soft, about 3-4 more minutes.
Let cool a few minutes.
In a large bowl combine beef, egg, onion mixture, breadcrumbs, salt, pepper and allspice.
Mix well and form meatballs with your hands 1/8 cup each (fill 1/4 cup then divide the meat in half).
Add beef stock to the pan and bring to a boil. Reduce heat to medium-low and slowly drop meatballs into the broth.
Cover and cook about 20 minutes. Remove the meatballs with a slotted spoon and set aside in a serving dish.
Strain the stock, add to blender with cream cheese and pulse until smooth. Return to pan and simmer a few minutes to thicken, then pour over meatballs. Garnish with parsley and serve over noodles or with toothpicks if you want to set these out as an appetizer.
Makes 22...5 of these bad boys and some gravy will cost you 214 calories and 10 grams of fat.
We served it over Ronzoni Smart Taste pasta.
It was really good...glad we doubled it, that means left overs!
After lunch Lily got her first little reward for doing so great with not sucking her thumb. The Thumb Busters are working great, and Bug is 100% on board with this...so I would say this is going to be a done deal pretty soon. Best of all the damage can stop and no need for the $1100 on an anti thumb sucking device.
Dad was nice enough to get everyone a small something...hate for the kiddos to feel left out if it can be helped. Or maybe we are just suckers LOL.
Lily was so happy to get her fave pony...Fluttershy...but Rarity and Applejack were well received too :)
The ponies were a hit for the rest of the night.
Even Gangster got in on the fun...since Fluttershy is all about the animals you know.
I saw an article floating around Facebook the other day about mean kids. It totally made me tear up. I am so scared for my sweet kids to run into bullies. I hate that I can't keep them protected from everything. I hope we can give them the tools they need, and the courage to use them. Read this...pass the message on to your kids, the bullied and the bullies alike. We can make a kinder happier world...we just have to start with our kids.
