PB&J is better than anything...didn't you know.

Yummy dinner today, well lunch...since we do family dinner for lunch the weeks Jason is on swing and not home at dinner time. A few different things I saw on Pinterest, have I turned any of you into believers yet?, that I had Jason throw together. It was amazing, at least to Jason and I...the kids, not so much...well except for the biscuits of course. They are crazy, and have no idea what they missed.





Our menu:
Ginger and Cilantro Baked TilapiaWe doubled this to feed the 6 of us
2 large tilapia fillets (or similar thin white fish) - about 3/4 pound....we used Cod. My husband is all about this support and buy USA kick and the Tilapia was all from China LOL.
1 jalapeno pepper (optional)
3 garlic cloves
1 inch grated ginger (1 tablespoon)
2 tablespoons soy sauce
1/4 cup white wine
1 teaspoon sesame oil
1/3 cup chopped cilantro
Scallions, chopped for garnish
Extra cilantro, to garnish
Heat the oven to 475ºF. Pat the fish dry and season lightly with salt and pepper. Place in a glass baking dish.
Chop the pepper and garlic, and grate the ginger. Put in a small food processor with the soy sauce, white wine, sesame oil, and cilantro. Whir until blended. Pour the sauce over the fish, rubbing it in a little. Bake for about 8 minutes, or until the fish flakes easily and is cooked through. It will be very moist and gelatinous, still.
Serve immediatley, garnished with scallions and cilantro.
Veggies 
2 teaspoons dried basil leaves
1 teaspoon lemon pepper seasoning
2 medium zucchini and  2 yellow squash, cut into 2x1-inch strips
1 medium red bell pepper, cut into 1-inch pieces
1 Tablespoon olive or vegetable oil
Preheat 450. Cut four 18x12-inch pieces of heavy-duty foil; spray with cooking spray. Place veggie medley on each foil piece. Sprinkle with the basil and lemon pepper. Drizzle with oil. Fold foil over vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
cook 25 minutes or until vegetables are tender.
Red Lobster Cheddar Bay Biscuits  
2 cups Bisquick biscuit mix
2/3 cup milk
1/2 cup cheddar cheese (shredded)
1/4 cup butter (melted)
1/4 teaspoon garlic powder
1/4 teaspoon dried parsley
Preheat oven to 450 degree. Mix biscuit mix, milk, and cheddar cheese until soft dough forms; beat vigorously for 30 seconds. Drop dough by spoonfuls onto ungreased cookie sheet. Bake for 8-10 minutes or until golden brown.
Mix melted butter, garlic powder, and dried parsley; brush generously over warm biscuits before removing from cookie sheet. Serve warm. Make 10-12 biscuits.

We added a little mashed potatos but only because we had some left overs, the meal didn't need them at all.

We were out side ALL day today, the kids were so ready for bed time...they were actually totally happy to be going to bed. All 4 were passed out by 8pm...woohoo!

Lily is so much her mothers daughter, even when it comes to her hordes of stuffed animals LOL. I had to take a picture of just how many she has...and she asks for more weekly hehehe.












Of course Xan and Haddie wanted me to take their picture too :) Xander insists on sleeping with a half dozen blankets. You can see we moved the kitchen into their room. We could not keep Jericho off it, and he was starting to mess with the photos we have up on the wall above where it used to be. Now he has aimed his sights on using our barstools to get up on the counter, so they are parked in the kitchen as of now. That boy I swear!
The trio have let us start branching out on their bed time stories. We have to go back through the old faves about every two nights, but it is really fun getting to read them some more of the books I read as a kid :)
