Prep work.

This is from last night. The girls are on another big My Little Pony kick...not that they ever stopped liking the show or characters, but some other faves have come and gone in the meantime, but they are back in full swing...and this is Ponyville. Ponyville has been in the girls room for 2 days now...wonder how long it will last. This has got to get hard on Haddie, out little mild OCD'er, eventually LOL.

Tomorrow is Super Bowl Sunday, the Seahawks are on the hunt for their first win...and I will be hosting my first Super Bowl party. Tonight the kids and I made some 12th Man cookies! Nothing too fancy, I don't want to have to top anything major next year LOL. Just some store bought sugar cookie dough, cooked up and decorated.

I saw a neat little trick on Pinterest for a faux fondant like frosting...worked like a charm. So easy in fact, the kids were helping. Just take regular store bought frosting, I colored mine Seahawks colors 1st, nuke it in the microwave for 15-20 seconds, pour into a squeeze bottle for decorating and go to work. Just make sure it is not too hot or it will be very runny. I guess you can decorate pretty much anything with this. It does need time, and a flat surface to harden up...I popped the cookies in the fridge for a bit so the frosting could set up.


Everyone got a turn except for Xander. He was too busy "playing" Mario. Jason got the Wii all blown out and fixed up at work. Now we get to try and teach the kids how to play. OMG. They are so sllloooowwww...it is seriously excruciating to watch LOL. Funny for the day...Haddie and Xan were playing, time was running out and the flag pole to pass the level was right in front of her. I yell "Hayden, jump on that pole!" Then Jason and I just look at each other and start cracking up...something I never thought I would say to my daughter LOL.


We also made football brownies.

The kids did not want to wait for the party...me either :)

After the kids went to bed Jason and I started prepping some of our appetizers. Not everything will be "Skinny" tomorrow, but these two are. Bacon wrapped chicken bites.

Super easy, you can prep the night before then bake the next day when you are ready....and they are only 70 calories and 2 grams of fat for 3 bites.

Ingredients:

1.25 lbs (3) boneless skinless chicken breast, cut in 1-inch chunks (about 30 pieces)
10 slices bacon, cut into thirds
Toothpicks
Sweet chili sauce for dip (extra cals/fat)

Directions:

Preheat oven on to 375°F.
Wrap a piece of bacon around each piece of chicken; secure with a toothpick and place on a baking sheet (use foil for easy cleanup).
Bake on the lower rack turning halfway about 25 minutes, or until thoroughly cooked and browned. Blot on a paper towel and serve right away.

We also premade the Skinny baked jalapeno poppers. 62 calories and 3 grams of fat for 2 poppers.

12 jalapeƱo peppers, sliced in half lengthwise
4.5 oz light cream cheese
5 medium scallions, green part only, sliced
2 oz shredded low fat sharp cheddar
1/2 cup egg whites, or beaters, beaten
1/2 cup panko crumbs
1/8 tsp paprika
1/8 tsp garlic powder
1/8 tsp chili powder
salt and fresh pepper
spray oil

 Preheat oven to 350°.
Wearing rubber gloves (Jason did it without the gloves but said his finger tips were tingling LOL), cut peppers in half lengthwise and scoop out the seeds and membrane.

Combine cream cheese, cheddar and scallions in a medium bowl.
Combine panko, paprika, chili powder, garlic powder, salt and pepper in another bowl.

Fill peppers with cheese filling with a small spoon or spatula.

Dip peppers in egg whites. Place pepper in panko mixture, using a spoon to make sure all the seasoning doesn't fall to the bottom of the bowl.

Spray a baking pan with oil spray. I lined my pan with parchment for easier cleanup. Lightly spray the peppers with a little more oil spray.

Bake in the oven for about 20-25 minutes, until golden and cheese oozes out. Remove from oven and serve immediately. Serve hot.

Can't wait for tomorrow! We haven't had a cheat day in like 2 weeks...I am so due LOL!
