My lazy approach to the school supply madness.

Kindergarten is almost upon us, it is amazing to me that we are here already...time really does march on. I am so glad we didn't let the triplets start last year at 5, Xander has matured so much over this last year...it was absolutely the right decision for us. The kids did testing to see if they qualified for summer school and none of them did, but the principle is allowing all three of them to go for the last week, they start on Monday. It is kind of a test to see how they do in the same class, since we have asked for them to be kept together, but were told that probably won't be happening. I really wish Oregon was one of those states where the choice is left to the parents of multiples, but it is not. I know they will be fine together or separate, it was mostly Jason and I that I was thinking about...it would be so much easier for us if they were kept together. The principle told us he can't promise but that he would give them a trial together the last week of summer school to see how they do. I think he is just doing this to look like he actually considered it, but I don't think he has any intention of keeping them together. Oh well, we will make do.

The kindy school supply list is not too crazy, unless you have to buy everything in triplicate LOL. Here is all the crap the kiddos need to have...the picture is short 3 boxes of crayons, 1 more box of markers and 3 dry erase markers...which should be arriving shortly. I totally took the lazy way out this year and bought everything online...it is more expensive I'm sure, but I just didn't feel like running all over the place searching out the best deal.
Tried out a new recipe today, it is not a "Skinny" recipe LOL, but it was really really good....and easy. Crock pot lasagna!















You need:
1 lb lean ground beef
A jar and a half of spaghetti sauce
16oz reduced fat cottage cheese
1/4 cup parmesan cheese
1 egg
1 tsp Italian seasoning
9 lasagna noodles, uncooked. Just regular noodles, not the no-boil or oven ready or any other kind.
8oz shredded reduced fat mozzarella cheese

Directions:
Brown beef and then mix in spaghetti sauce.

In a bowl mix cottage cheese, parmesan cheese, egg and seasoning.

Spray crock pot with nonstick spray.

Place 1/3 of meat sauce in the bottom on the crock pot, spread evenly.
Break 3 lasagna noodles to fit and lay on top of the meat sauce.
Spread half the cottage cheese mixture on the noodles.
Put half the mozzarella on the cottage cheese.

Repeat layers once more.

Top second set of layers with remaining 3 broken noodles, then top with last 3rd of the meat sauce.

Cover cook on low for 5-6 hours, until noodles are tender. We sprinkled a little more mozzarella over the top about 15 min before we served.

While we waited for dinner to cook itself, Haddie and I went to the Dentist. She is now ready for her expander to be placed....but they needed to take another mold of her mouth first. Hopefully she will get it in early next week.
We have had some thunderstorms the last couple of days, and a little rain. Today we saw a break for a couple hours and the kiddos wanted to get outside for some bike riding.

I take that back, Hayden and Xander did some bike riding...Lily and Jericho are too scared, even with training wheels. She likes to look like she is a bike rider.

Even with Dad's help the two wusses wouldn't go for it.

I'm sure they will get it eventually.

Dinner was great! I am going to try a chicken and veggie with white sauce crock pot lasagna next.
