Short, but for sure sweet.

My sister and fam had to fly back home today, major sad face. The trip was WAY too short, but it was a good one! We got to hang out all afternoon before they had to go, lots of fun...we sure crammed in a lot of quality time in our brief day and a half together.

One more bonus of this visit...Jason got his long awaited Seahawks welding mask that Trent painted for him. Pretty awesome right?!

Hey you know if you need a side job in addition to the Dentist thing I think we could keep you in business...the kids would love some new shirts ;)

Jason put together a Mexican feast, birthday girl's request, Skinny no less. I loved it, everyone else said they liked it too, hopefully they weren't lying LOL.

We made those YUMMY Chicken and white bean enchilada's again, just as awesome this time as I remembered them to be. Jason also made the Southwestern black bean salad again...this time with less lime and it was fabulous, much better than last time. Some of that Cilantro lime rice, so good.

We also made one new dish...I really enjoyed it!

Skinny Skillet Mexican Zucchini.

Ingredients:

  • 1 garlic clove, finely chopped
  • 1 tbsp extra virgin olive oil
  • 1 lb zucchini, diced
  • 1 large tomato, cored, seeded and diced
  • 1 green onion, thinly sliced
  • 1 tbsp minced fresh cilantro or Garden Gourmet cilantro paste
  • 1 tsp minced pickled jalapeño
  • 1/2 cup crumbled queso blanco (or queso fresco, cotija or feta)
  • fresh lime juice, to taste
  • salt, to taste
  • freshly ground black pepper, to taste

Directions:

Cook the garlic in oil in a large skillet over medium heat 1 minute, stirring until sizzling. Add zucchini and cook stirring occasionally, about 3 minutes or until slightly softened. Add the tomato and green onion and cook about 3 minutes.

Remove skillet from heat and add cilantro paste, jalapeño and lime juice. Season with salt and pepper to taste and top with queso blanco. Serve hot.


It was a Mexican bananza alright!

A new arrival of Scentsy helped make me feel better a tiny bit. Yay for my kids (and poor guests) bathroom no longer smelling like a couple of boys have been perfecting their aim in there...without much success LOL.

My bathroom just smells pretty :)
