I have a goat kid...this one takes after his Auntie Allie, who also used to chew on her sleeves as a child. Ugh...at least it is not sucking his thumb.
I keep playing around with the "healthy" cookie recipe...they have all been really good, you can find them in the What's Cookin', Good Lookin' section, but this one may be my fave.
You need:
3 banana's mashed
2 cups of quick oats
4 TBsp peanut butter (I used chunky...the little bits of peanuts were nice, you can use a substitute to make these even lighter)
1 tsp vanilla extract
1 TBsp honey (opt)
2/3 cup butterscotch chips (opt)
Directions:
Oven to 350, nonstick surface on your cookie sheets.
Combine everything is a medium bowl.
Make balls, about 2 TBsp size each. Bake for 10 min or until bottom starts to brown.
2 cookies are 112 cals and 4 grams of fat.
We have had a really mild winter so far. We were actually hoping to get the trio up skiing for the first time this winter, I am not too sure that is going to happen. The munchkins spent a good two hours out side playing, both yesterday and today...oh I can not wait for summer to get here! Xander loves the ice he finds in the dogs water bowl LOL.

Ingredients:
15.5 oz can black beans, rinsed and drained
9 oz cooked corn, from fresh or frozen
1 medium tomato, chopped
1/3 cup red onion, chopped
1 scallion, chopped
1 1/2 - 2 limes, juice of (we used 2 and it was a touch too much)
1 tbsp olive oil
2 tbsp fresh minced cilantro (or more to taste)
salt and fresh pepper
1 medium hass avocado, diced
1 diced jalapeno (optional)
Directions:
In a large bowl, combine beans, corn, tomato, onion, scallion, cilantro, salt and pepper. Squeeze fresh lime juice to taste and stir in olive oil. Marinate in the refrigerator 30 minutes. Add avocado just before serving. 1/2 cup is 80 calories and 4 grams of fat.
So good...and much better for you than anything you can get out of a window in a paper bag.
