I am so lucky my hubby is a cook!

Just a quick post today to share a yummy concoction we had for dinner tonight. We got a recipie from Grandma for a Quesadillia Pie and twisted it with a Pinterest find...yummo!

2 lb chicken meat (cooked...we got one of those rotisserie chickens)
4 cups cooked brown rice
3/4 cup frozen corn
15oz can black beans, drained and rinsed
2 cups chucky salsa, divided
1 cup low fat sour cream
4 1/2 flour tortillas
1 1/2 cups shredded cheddar or Mexican blend
2 cups raw spinach


1. Preheat oven to 375
2. Combine chicken, rice, beans, corn, sour cream and half the salsa in large bowl. Spread 1/2 cup salsa on bottom of 9 X 13 oven safe dish.
3. Press 1 tortilla into dish, top with half the chicken mixture. Sprinkle with an even layer of cheese and half the spinach. Repeat that layer, reserving about 1/4 cup cheese. Top with final tortilla, spread with remaining 1/2 cup salsa and sprinkle with remaining cheese.
4. Cover with foil, bake 20 minutes. Remove foil and bake 5 minutes longer, or untill cheese melts.
5. To serve, cut like a lasagna.
