A week of mom cooking eeekkkk!

So today is day 1 of me doing crock pot dinners for a week. Fingers crossed :) I even tossed in a premade breakfast this morning.

Baked french toast, an old fave around here. Prep work the night before then pop in oven...Mmm Mmm good! I have the recipe listed in this Easter post.
I got dinner going about the same time....super easy, Cream Cheese Chicken Goodness!
-Chicken 3lb
- 8 oz block of cream cheese (don't use Fat Free! 1/3 less fat or regular is fine)
- Can of Black Beans, drained & rinsed. (or Pinto Beans if you prefer)
- Can of Corn, drained.
- Can of Rotel

Directions:
Put frozen chicken in the crock pot.
Put Cream cheese on top of the chicken.
Dump in the Black Beans (make sure they are drained & rinsed!!!)
Dump in the drained corn.
Dump in the Rotel.
Cover & cook in your Crock Pot on low for 6-8 hours.
Every 2 hours, stir the ingredients.
You can shred the chicken when it is done.
It will be pretty soupy...let it sit, turned off, for 30-45 min.
 
When it was done we cooked some rice and added it in.

I served it in tortilla's and over chips, it was really yummy!
Jericho being silly. A little 1:1 fun with Momma when the trio are in school...I love this sweet boy!

Dinner was a hit with everyone but the girls...they are our picky kids right now.
