The sacrifices we make.

I am so fricking hungry. I have 8 weeks to get my butt into a Catwoman costume. Smart, dedicated people do weight loss through exercise and a healthy diet. The busy Mom that I am will be doing it through sheer starvation LOL. Not quite, but that is about how I feel.
 
Dinner tonight was really good...and really good for you. Hawaiian pork chops with steamed veggies and steamed Jasmine rice. Yummy! 

The Pork chop recipe is actually a Weight Watchers recipe I found on line. It was so simple to make. You need...
4 (1/2 inch) pork chops
  • 8 ounces pineapple slices, drained, reserve juice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground nutmeg

    How to:
    1-Place pork chops on baking dish that is lightly sprayed with cooking spray.                            
     2-Mix 2 tablespoons of the reserved pineapple juice with brown sugar and nutmeg. Spoon half of the mixture over the pork chops. Top with pineapple slices and spoon remaining mixture over the pineapple.
    3-Cover and bake 30 minutes at 350°F Uncover and bake 20 minutes longer, sauce over chops occasionally.

    Had to take a picture of Haddie. She is still missing her Auntie Stacie. She got a new Beanie Baby from her Great Aunt Julie at the Labor Day party...that she adores. She has named her "Auntie Stacie" LOL. I hope you feel loved Stacie, because you sure are :)
