Photo challenge, day 7...6 o'clock. Yeah so this one was a little lame LOL.
Tonight's dinner was another winner from Skinny Taste. Asian glazed chicken. Really good!
Ingredients:
8 medium chicken drumsticks, skin removed (we used 6-7 boneless skinless thighs instead)
olive oil spray
1 cup water
1 tbsp Sriracha hot sauce (more or less to taste)
1/3 cup balsamic vinegar
1/3 cup low sodium soy sauce
1 tbsp honey (or sugar)
3 cloves garlic, crushed
1 tsp ginger, grated
2 tbsp chives or scallions, chopped
1 tsp sesame seeds
Directions:
In a heavy large saucepan, brown chicken on high for 3-4 minutes with a little spray oil.
Add water, balsamic, soy sauce, honey, garlic, ginger, hot sauce and cook on high until liquid comes to a boil.
Reduce heat to low and simmer, covered for about 20 minutes.
Remove cover and bring heat to high, allowing sauce to reduce down, about 8-10 minutes, until it becomes thick, turning chicken occasionally. (Keep an eye on glaze, you don't want it to burn when it starts becoming thick.)
Transfer chicken to a platter and pour sauce on top. Top with chives and sesame seeds and serve.
2 drumsticks or 1 thigh will set you back about 213 calories and 5 grams of fat.
We served it with steamed broccoli and a little steamed whole grain brown Jasmine rice.
After dinner the mother of all wrestling matches went down in my living room. Every pillow, blanket and stuffed animal in the boys room was brought out...heck even the dog was involved.
4 little kids, 1 grown up kid and a dog...they can sure get going. This went on for almost 40 minutes.
A good little energy burn before bed.
I'm still getting updates from Sakari, about once every other day. She is doing great, and loving the snow :)
