Still not tired of pumpkin goodness.

Grandma came over to spend a couple hours with us today. She brought some fun crafty stuff that the kiddos loved playing with.
Quick, everyone crowd Grandma LOL.
They all did a great job with their mosaic art. Of course our OCD child excelled, she stopped at nothing until hers was perfect.



I didn't start my pumpkin baking until Thanksgiving, so I am still loving all things pumpkin. Today I made some lightened up pumpkin cream cheese bread. I kinda took bits and pieces from a couple recipe's and made my own. It looked good going in...I was a little worried if anyone would like it though.



















I used:
White whole wheat flour 1 1/4 cups
pumpkin puree 1 1/2 cups
baking soda 3/4tsp
cinnamon 1tsp
pumpkin pie spice 1tsp
unsalted butter...soft 2 TBsp
light brown sugar 1/2 cup
1 egg
1 egg white
vanilla extract 1tsp
1/3 less fat cream cheese...soft 4oz

Instructions:
 Preheat oven to 325°. Grease a 9x5 inch loaf pan with baking spray.

In a medium bowl, combine flour, baking soda, pumpkin and cinnamon spice with a wire whisk. Set aside.

 In a large bowl, cream butter and sugar with an electric mixer. Add egg white, egg, pumpkin, cream cheese and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.

Add flour mixture, then blend at low speed until combined. Do not over mix.

 Pour batter into loaf pan and bake on the center rack for 50 minutes, or until a toothpick inserted in the center comes out clean. Let the pan cool at least 20 minutes, bread should be room temperature before slicing. Makes one, 12 slice, loaf. 1 slice is 131 calories and 5 grams of fat.

While the bread was baking the trio got their first hands on sewing lesson from Grandma. Everyone took a turn, but Xander seemed to enjoy it the most.


The kids were bringing anything and everything they could think of that needed a stitch or two LOL.
Xander sewed a small tear in his Spider Man hoody almost all by himself.



I am happy to report the bread came out really good. Of course my kids will eat anything they think it a treat, add that to bread and fuggetaboutit. Grandma and I thought it was good too, so that should count for something LOL.
