My Mother's Day.

I had a nice chill kinda day....that started early, goodness. Jason left for work at 6:30am and for some reason the triplets no longer sleep until 9, or even 8. At 7:15 this morning Xander came into our room (must get even better child proof door knob covers,) yelling that I had to come eat my rainbow cookies or cupcakes or something.
I jumped out of bed, not so much because I thought Jason left any such goodies but because I was worried just how my almost 4 year olds made these special treats....Xander has also been climbing our 3ft high baby gate that keeps them from running amok in the kitchen.
Turns out the morning light coming in through the door was throwing a rainbow pattern on the wall, the kids were pretending to grab handfuls of this rainbow goodness and eat it...they wanted me to eat some too. I obliged it was too early for anything else.

We had breakfast then headed outside to play in the back yard, it has been beautiful here for the last week! After lunch we made these no bake protein cookie balls...yum! Then watched a little My Little Pony, a new fave around here.

When Jason got home from work he and the kids gave me a little 'Mom' necklace, a cool balloon and a beautiful orchid plant, that I am sure to kill LOL. He also got some Olive Garden take out. After dinner we all headed back out side. After doing some swinging and trampoline jumping we threw the football for about an hour. I asked Jason if that meant we were going to go get mani's and pedi's on Father's Day :)

These cookies are super good, and so easy...a few 3 1/2 years can make them har har har. Oh Pinterest what ever did I do before you came around?!
No-Bake Energy Bites Recipe
Ingredients:
  • 1 cup (dry) oatmeal (I used old-fashioned oats)
  • 1 cup toasted coconut flakes
  • 1/2 cup chocolate chips
  • 1/2 cup peanut butter
  • 1/2 cup ground flaxseed
  • 1/3 cup honey
  • 1 tsp. vanilla
Method:
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1″ in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.
Makes about 20-25 balls.


















Everyone got to dump in the ingredients, and they did a good job.

















BUT cookie ball rolling is where they really shined :)



















My new necklace that the kids helped pick out...it came with a cute little picture frame too.
I love every bit of being a Momma to these 4 amazing children! Even when I am fresh out of the shower with hair undone and zero makeup on...ugh.
